Ingredients serves 3
Rice 1 1/2 cup
Onions 2 med. finely sliced
Ginger paste 1/2 tbsp
Sugar 2 tbsp
Water 3 cups
Green cardamom 4
Cumin 1 tsp
Oil 1 tbsp
Salt to taste
Method:
- Wash rice 3-4 times.
- Spread sugar in a pan and heat it.
- You will see sugar melting and turning brown.
- When it turns slightly darkish brown, turn off the gas and carefully add 3 cups of water. This is caramelised water.
- Heat oil in a large pan.
- Crackle cumin.
- Add cardamom and onions.
- Sauté onions till soft and pink.
- Add ginger paste . Sauté till onions turn golden.
- Now drain and add rice, salt and the caramalized water that we had prepared earlier.
- Bring it to a boil , cover and cook on low heat till all the water is absorbed and the rice is done.
- Serve hot with Dhansak
