Grilled Paneer and Vegetable Rajma Salad ( Grilled Cottage Cheese and Vegetable and Kidney Bean Salad)


A colourful and filling salad with faint notes of orange. Wonderful option for evening cravings , meal times and  dinner parties .
I used to give this to my son in the evenings when he came back from school.



















Ingredients : serves 3-4:
Rajma ( kidney bean).               1/4 cup
Paneer (cottage cheese)            100 gms
Red bell pepper                        1/2
Yellow bell pepper                    1/2
Zucchini.                                  1/2 of medium sized.
Tinned Pineapple                       2 slices

Marinade for Paneer
Crushed Garlic                           1/2 tsp 
Ginger paste                              1/ 2 tsp
Lemon juice                              1/2 tsp
Roasted cumin pd                       1/4 tsp
Red chilly pd                             1/4 tsp
Salt.                                         1/4 tsp
Oil.                                          1 tsp for sautéing paneer

Dressing :
Juice of                                   1 Orange
Zest  of                                    1 orange
Lemon juice                             1 tbsp
Extra virgin  olive oil                1 tbsp
Roasted cumin pd                     1/2 tsp
Ground pepper                         1/2 tsp
Salt                                         To taste

Method:
  1. Wash  and soak rajma overnite.
  2. Pressure cook them with sufficient water and 1/2 tsp of salt.
  3. Care should be taken that they are just done and not too soft.
  4. Drain and keep them aside.
  5. Cut paneer into small cubes.
  6. Mix all ingredients of marinade and rub it on paneer cubes.
  7. Cut bell peppers and zucchini into large chunks.
  8. Heat a grill pan and grill the vegetables  without oil till grill marks appear on them.
  9. Keep them aside. Grill the pineapple slices in a similar manner
  10. Once slightly cool cut them all into smaller pieces
  11. In the same pan add I tsp oil and grill paneer .
  12. Keep it aside.
  13. Take all ingredients  except salt mentioned under dressing and whisk well.
  14. In a large bowl mix rajma, vegetables and paneer. Pour the dressing.
  15. Mix lightly.
  16. Cover with a cling film and referigerate . This helps flavours to penetrate.
  17. Just before serving add salt and mix.
Note : 
I don't like to add too much oil to my dressings coz I feel then the purpose of making a salad is defeated. You can add oil as per your preference .

I have just added  1 tbsp of lemon juice which doesn't make it very tangy, it's just right. You can taste the salad before serving and adjust not only lemon juice but also pepper.

The hero of this dressing is orange zest and orange juice.

If you don't have a grill pan, use a regular non stick pan .
